At last, we can now drink through the week with no negative repercussions (apart from the fact that you will become an alcoholic).
Some boffins have finally done something useful with science and found a way to create booze that they claim won’t give you a hangover.
Now, we know you care more about getting wasted on a weekday than the actual science that could enable you to do this, but the researchers at the University of Illinois have worked really hard on this breakthrough so listen up:
The scientists used a ‘genone knife’ to engineer yeast strains used in alcoholic beverages.
Using this advanced technology the team were able to identify and remove individual yeast strains which give the drinks certain characteristics.

Publishing their work in the Applied and Environmental Microbiology journal, study leader Yong-Su Jin said: ‘Say we have a yeast that produces a wine with great flavour and we want to know why. We delete one gene, then another, until the distinctive flavour is gone, and we know we’ve isolated the gene responsible for that characteristic.’
He noted that winemakers could use this technology to alter malolactic fermentation, which makes wine smooth but also creates toxins which can lead to a hangover.
Someone please give these people a grant so they can continue their very important research… for science of course.
